Low FODMAP BBQ Tofu Burrito Bowls

Makes 2 servings.

Ingredients:

  • 1 Tbsp olive oil

  • 1 block firm tofu, chopped*

  • 1/2 red bell pepper, sliced

  • 4 Tbsp Fody Chipotle BBQ Sauce

  • 1 cup brown rice, cooked

  • 1/3 c shredded monterey jack cheese

  • 1/2 c shredded lettuce

  • 1/2 tomato, diced

  • 1/4 avocado, sliced

* Alternative: use chicken or your preferred protein

Directions:

  1. Heat oil in a large skillet. Add tofu and red bell pepper, and cook for 8-10 minutes, until tofu is browned and bell pepper is soft. Add sauce and mix well, until all of tofu is covered

  2. Prepare bowls by separating brown rice in 2 bowls, then topping each with half of the tofu mixture and all toppings.
