Low FODMAP BBQ Tofu Burrito Bowls

Makes 2 servings.
Ingredients:
1 Tbsp olive oil
1 block firm tofu, chopped*
1/2 red bell pepper, sliced
1 cup brown rice, cooked
1/3 c shredded monterey jack cheese
1/2 c shredded lettuce
1/2 tomato, diced
1/4 avocado, sliced
* Alternative: use chicken or your preferred protein
Directions:
Heat oil in a large skillet. Add tofu and red bell pepper, and cook for 8-10 minutes, until tofu is browned and bell pepper is soft. Add sauce and mix well, until all of tofu is covered
Prepare bowls by separating brown rice in 2 bowls, then topping each with half of the tofu mixture and all toppings.
